Frugal Friday – Pizza/Pasta Sauce

I love taking advantage of specials on fruit and veggies to help us to eat healthy food for less. My kids love homemade pizza (and so do we!), so I always try to make sure I keep a stash of homemade sauce in the freezer ready for our weekend pizza-making activities. When I saw that my local greengrocer had some beautiful ripe tomatoes reduced for quick sale, I grabbed a couple of packages and made this simple and delicious sauce. It is so simple it’s one of those blink-and-you’ll-miss-it type recipes.

All you need to do it slice the tomatoes into wedges, lay them out on a baking tray(s) along with a brown onion, cut into wedges, and a few whole cloves of garlic.

I often add these to the oven while slow cooking another dish, or after I’ve done some other baking – may as well use it while it’s hot!

Drizzle with some olive oil and bake at 150 degrees C for about an hour, or until beautifully caramelised, like this:

Then simply dump it all into a food processor or blender, and blend until smooth, adding seasoning or herbs as you wish (I often add oregano or an Italian herb blend to mine). Then just pour into containers – glass jars, plastic tubs, zip-lock bags, whatever you prefer – and freeze until the urge for fresh pizza overcomes you!

Not bad for $5 worth of tomatoes!

This also makes a fabulous replacement for tinned tomatoes or passata in bolognese or other tomato-based dishes.
